Ingredients

1 cup couscous

1 cup water or broth

1 tablespoons olive oil

½ teaspoon salt

2 tablespoons olive oil

Pinch of salt

Zest from one lemon

1 tablespoon fresh lemon juice

3 garlic cloves, minced

⅓ cup parsley + more for garnish, finely chopped

4 tablespoon pine nuts, roasted (save 1 tablespoon for garnish)

Dressing
Directions
In a medium saucepan, bring the water/broth to a boil and add couscous, 1 tablespoon olive oil and ½ teaspoon salt. Turn off burner and let stand with lid on for 5 minutes. Remove lid and fluff with a fork.
While the couscous is cooking, add the pine nuts to a pan and toast until lightly browned. Set aside for the dressing and garnish.
Dressing
In a bowl, add the olive oil, salt, lemon zest, lemon juice, garlic, parsley, 3 tablespoons toasted pine nuts and red pepper flakes.
In a large bowl, add cooked couscous and toss with dressing. Garnish with remaining pine nuts and parsley. Serve and enjoy!
