Pickled beet eggs are hardboiled eggs that are soaked in a brine of beet juice, vinegar, salt and sugar. I love both the beets and the eggs together. The eggs get such a beautiful color. They are great to slice and serve with a salad too!

A vibrant, earthy beet tartare finely chopped and seasoned with tangy vinaigrette, citrus and herbs, offering a fresh, plant-based repeat on the classic dish. Finished with a smokey salt.  For Beets sake, eat more beets!
