Ingredients

⅓ cup oil (grape seed or olive oil)

2 heaping tablespoons of paprika

2 red peppers sliced into small strips (or use yellow and green)

½ jalapeno diced (if removing seeds, add the whole jalapeno)

10 garlic cloves, whole
-
2 carrots, cut into 2 inch strips

3 tomatoes, chopped finely
-
½ bunch cilantro, chopped (plus more for garnish)

⅓ cup preserved lemons, or fresh lemon juice
-
¼ cup green olives, chopped
-
2 cups water
-
1 small bag frozen Lima beans (or use fava beans)

Taste for additional salt (preserved lemons may have enough salt)
Directions
In a large pan or tagine over medium heat, add oil and paprika. Stir to combine.
Add chopped vegetables into the pan and sauté for about 5 minutes.
Add the cilantro, preserved lemons, olives and water. Mix well and add beans. Cover and cook for 25 minutes.
Add fish filets into the sauce, making sure to drizzle sauce over the fish. Cover and cook for 20 minutes.
Serve hot with cilantro sprinkled over the top.
Enjoy with some fresh bread or any cooked grain on the side.
