One Pot Salmon with Tomatoes, Spinach and Orzo

This meal is a full rounded dinner, but you can make a salad to serve. I have served this with a simple salad and a shot of Tomato Ginger Bisque.

Ingredients

4 (4-oz) salmon fillets, skin on

Salt and pepper to season fish

3 tablespoons olive oil

2 tablespoons butter
-
1 shallot, diced
-
5 garlic cloves, minced
-
1 ½ cups cherry tomatoes, cut in half
-
1 ½ cups orzo, uncooked
-
2 cups chicken stock
-
½ lemon, juiced
-
1 tablespoon chopped fresh parsley

1 cup half and half, or whole milk

2 cups fresh baby spinach
-
Fresh Parmesan, grated for serving

Handful fresh basil, cut into strips for serving

½ lemon, cut into quarters for serving

Red pepper flakes, for serving - optional
Directions
In a large skillet, heat the olive oil and butter until melted.
Season salmon fillets with salt and pepper and place skin side down in hot pan. Sear for 2-3 minutes per side until browned on both sides. Remove salmon to a plate and set aside. At this point the skin should easily be removed from the salmon.
In the same pan, add additional olive oil and butter if needed. Add chopped shallot to pan and cook until translucent. About 3 minutes.
Add the garlic and halved cherry tomatoes and cook for about 5 minutes or until the tomatoes are softened.
Add the dry orzo to the pan and stir to completely combine with the shallot and tomato mixture. Add chicken stock and bring to a boil.
Reduce heat and simmer, put lid on and cook for 10 minutes or until the orzo is cooked through. Stir the orzo every few minutes to prevent it from sticking to the bottom of the pan.
Add the lemon juice and parsley and stir. Stir in the half and half and taste for additional salt/pepper. Add the spinach and cook until the spinach is wilted, about 2 minutes.
Gently place the cooked salmon back into the pan and allow to simmer for 5 minutes until the salmon is cooked through. Turn off the heat and garnish with Parmesan cheese and chopped basil.
Serve with lemon wedges and red pepper flakes.
