Ingredients

4 boneless, skinless chicken breast thin cut

1 teaspoon salt

½ teaspoon pepper

2 tablespoons butter
-
2 tablespoons olive oil

4 garlic cloves, minced

1 cup heavy cream (or half and half)

½ cup chicken broth Or white wine
-
1 chicken bouillon or 1 teaspoon Better than Bouillon
-
½ cup grated Parmesan cheese
-
1 - 6.7 oz jar sun-dried tomatoes, chopped
-
1 package of white mushrooms, sliced
-
1 teaspoon Italian seasoning
-
½ teaspoon red pepper flakes

Basil leaves for topping
Directions
Pat dry chicken breasts with a paper towel and lightly season with salt and pepper on both sides.
In a large frying pan, add butter and oil over medium heat until hot. Add seasoned chicken breast and cook until browned on both sides. Remove from pan and set aside.
In the same pan over medium heat, add the garlic and cook for about 30 seconds. Stir in the remaining ingredients and lightly whisk to combine. Lower the temperature to low and add the chicken back to the pan. Allow to simmer in the sauce for about 20 minutes.

Turn off the heat and sprinkle the basil and additional Parmesan cheese over the top.
Serve over pasta with a side salad for perfect meal.
Crusty bread is always good to soak up the delicious sauce.
