Pork roast, sauerkraut and mashed potatoes

This is a traditional PA Dutch recipe that my family has every year on New Years Day. People eat pork on New Year's for good luck, prosperity, and to symbolize moving forward, stemming from German/Pennsylvania Dutch traditions where pigs root forward, representing progress, and their fat signifies wealth, unlike backward-moving birds. This hearty meal, often with sauerkraut (representing money), is a way to honor ancestry and wish for a successful year ahead, contrasting with foods like lobster (walks backward) or chicken (scratches backward). The roast cooks on LOW for 8 hours in the crock pot and it is served with mashed potatoes.
