The picture can’t do the taste any justice. This is a must try.
1 onion, roughly chopped
6 garlic cloves
1 tomato, roughly chopped
1 handful of toor dal
2 green chilis
1/2 cup water
Drizzle of tamarind paste, about 1 T.
Salt to taste
1 T. Oil
Add vegetables and dal to pressure cooker pot. Add enough spinach to fill the pot to the top. Add 1/2 cup water. Secure the lid and pressure cook for 7 minutes. Release pressure.
Using a hand blender (or add to a blender), blend the cooked vegetables until you have a smooth texture.
Add tamarind paste and stir to combine.
In a small pan add 1 T. Oil and about 1 T. Vadagam. Cook until it splatters.
Add vadagam to smooth spinach and stir to combine. Add salt to taste. It is now ready to serve with steaming rice.
