I like a creamy cucumber salad. It’s the type that I grew up eating.

Serve with any Mediterranean dish. Goes well anytime too as a fresh side salad. You can never have too many salad recipes.

You won’t believe how good this warm salad is. You don’t have to use your BBQ grill. You can use any heavy pan on the stove. I used my cast iron grill pan.

This goes well with lamb tagine or grilled chicken. It is a pretty presentation with the red pomegranate seeds and the green pistachio, mint and parsley. Topped off with a citrusy lemon dressing.
