Pickled beet eggs are hardboiled eggs that are soaked in a brine of beet juice, vinegar, salt and sugar. I love both the beets and the eggs together. The eggs get such a beautiful color. They are great to slice and serve with a salad too!

This recipe is great as a side for almost any meal. It's especially good with fresh garden tomatoes. You can also use grape tomatoes.

This is my dream salad dressing. I really want to lick my plate after finishing my salad!

Sounds boring, but it's not! Try something new. This is a great lunch for all us who are WFH!

For Beets sake, eat more beets!
